1. Butternut Squash Soup

  • 1 pound butternut squash
  • 1 medium potato
  • 1 tablespoon of olive oil
  • 1 bay leaf
  • salt
  • pepper
  • 2 shallots

Slice the 2 shallots and then dice the butternut squash. Peel the potato and cut into smaller pieces. Heat the 1 tablespoon of olive oil in a pot, and then add the shallots. Stir occasionally and cook for about 5-10 minutes. Add the squash, potato, and a small amount of salt, as well as, three cups of water. Turn the heat up only slightly and then let it cook for about 30 minutes with just occasional stirring. The squash will then become tender. For the final step, you will remove the bay leaf, and have the soup cool for a few minutes. Puree the soup or transfer it into a blender then back into the pot. Once the soup cools down more, it will become thicker and more creamy. Lastly, add the salt and pepper, and it will be ready to eat!

2. Chili

Putting together a delicious pot of chili is a great comfort meal food, especially for the Fall season! An easy chili recipe to make has these ingredients:

  • 1 tablespoon of olive oil
  • 1 Diced yellow onion
  • 1 can of tomato sauce
  • 1 can of red kidney beans
  • 1 can of diced tomatoes
  • 1 1/2 cup of beef broth
  • 1/2 teaspoon of ground pepper
  • 1 1/2 teaspoon of salt
  • 1 tablespoon of garlic powder
  • 2 tablespoons of tomato paste
  • 2 tablespoons of sugar
  • 1 pound of ground beef
  • 2 1/2 tablespoons of chili powder

First you will add the olive oil to the pot and cook on medium for about 2 minutes, next add the chopped onion and cook that for about five minutes. Next add the ground beef to the pot and cook this for about six or seven minutes until the beef is browned. Then, you will add the chili powder, cumin, sugar, tomato paste, garlic powder, salt, and pepper. Stir until everything is completely mixed together. Finally, turn the liquid to a low boil and then reduce the heat down, and let it sit for about 20-25 minutes. Lastly, you will, of course take the pot off the heat and let it cool down before enjoying your yummy bowl of chili!

3. Pumpkin Chorizo Pizza

Almost everyone enjoys a good slice of pizza! Change it up this Fall season with a Pumpkin Chorizo Pizza! The ingredients for this recipe calls for:

  • Salt
  • Pepper
  • 1 tablespoon of olive oil
  • 1 tablespoon of thin sliced lemon zest
  • 1 small red chile pepper
  • 1/2 cup of thin sliced red onions
  • 1 cup of parsley leaves
  • 6 ounces of chorizo with the castings removed and made into small pieces
  • 1/4 cup of pumpkin, about 8 ounces
  • 1 pound of pizza dough
  • flour
  • cornmeal used for the baking sheet

First, you will want to preheat the oven to about 475 degrees. Add the cornmeal to the baking sheet. Make the pizza dough into a large rectangle or circle, (whichever you prefer!) and transfer to the baking sheet. Next, you will need to peel the pumpkin. This can be easily done with a vegetable peeler. Shave flesh into ribbons to make it equivelnt to about 2 cups. The chorizo, parsley, pumpkin, onion, lemon zest, chile pepper, and oil will be combined into a bowl. The salt and pepper will be the seasoning to add. You will also want to add the half of gruyere and toss it to combine. The final step of making your Pumpkin Chorizo Pizza is to scatter the pumpkin mixture over the dough, and just sprinkle it with any of the remaining gruyere. Bake it until the crust is at a deep golden brown and the pumpkin will also become tender. This should only take about 10-15 minutes.

4. Creamy One Pot Pasta with Sausauge and Squash

Another easy recipe to make that will taste wonderful this Fall season is the creamy one post pasta with sausauge and squash! The only ingredients that you will need to make this dish are:

  • 12 ounces of italian sausage
  • 2 cups of milk
  • 1 cup of heavy cream
  • 3 tablespoons of olive oil
  • Pepper
  • 1/4 teaspoon of nutmeg
  • 2 1/2 teaspoons of salt
  • 1 sprig sage
  • 1 garlic clove
  • 1/2 pound of fusilli
  • 1/2 large butternut squash
  • 1 1/2 cups of parmesan
  • 1 tablespoon of flour

First you will want to heat the oil in a pot on medium high. Cook the sausage to about one inch pieces with a wooden spoon. These will only need to be cooked for about five to seven minutes. Next, you will add the flour and cook for about one minute. Then, you will combine milk, cream, and 2 cups of water in a large bowl or a measuring cups. Stir the sausauge mixture constantly, slowly stream in the milk mixture, and bring to a simmer. After that, you will then add 1 1/4 cup of parmesean and cook. Stir until the cheese is melted. Then you will add in your squash, garlic, pasta, salt, sage, and nutmeg. Toss to combine and make sure that the pasta is covered with the liquid. Boil and then reduce the heat to low and bring it down to a simmer. Make sure that you cook until pasta is done and the squash breaks down more. This should only take about 20 minutes. Let it cool down and add any toppings that you might like to your pasta. For example, parmeasan or salt and pepper.

5. Apple Cider Chicken

Try out the incredible apple cider chicken recipe. The only ingredients that you will need for this recipe includes:

  • two tablespoons of olive oil
  • two tablespoons of butter
  • four boneless, skinless, chicken breasts
  • salt
  • pepper
  • 1 1/2 cups of apple cider
  • 2 tablespoons of all purpose flour
  • 2 bay leaves
  • 2 teaspoons of dried thyme
  • 3 cloves of garlic
  • 1 apple, sliced into 1/4 inch wedges
  • 1/2 vidalia onion chopped

To make this delightful apple cider chicken recipe, you will first need to heat the oil and butter in a skillet over the medium heat. Season the chicken breast with salt and pepper. Add it to the pan until it’s golden on both sides. Next, you will remove the chicken from the pan and put it over to the side. Add butter, onion, apple, garlic, thyme, and bay leaves. You will want to saute until the apple starts to get color and the onions soften. This should generally take about six minutes. Put the chicken back into the pan, add cider, bring to a boil, once it has come to a boil, reduce it down and cover. Make sure that your chicken is thouroughly cooked. This should take about twelve minutes.

6. Salmon Cakes

  • 2 strips of cooked bacon, bacon fat reserved
  • 1/4 cup chopped onion
  • 1 egg
  • 1/2 cup of mayonnaise
  • 1/2 cup of vegetable oil
  • pepper
  • two tablespoons of parmesan
  • 1/4 cup of bread crumbs
  • 1 baked potato
  • 1 can of wild salmon
  • 1/2 lemon
  • 1/2 tablespoon of sugar

Once you star cooking this meal, the first thing that you will want to do is heat one tablespoon of the reserved bacon fat in a small saute pan on low heat. Next, you will want to add the onions and cook them until they are pretty much translucent. Then you will need to mix the bacon, onion, egg, mayonnaise, mustard, sugar, and lemon zest into a bowl. Add the salmon and potato, mix gently after adding each ingredient. Then you will have to form the mixture into 12 small patties. Get a shallow dish to combine the bread crumbs, parmesan, and pepper. Coat the patties into the bread crumb topping. Heat 1/4 cup of the oil into a large pan on medium heat and cook the salmon cakes in a batch until golden brown.

7. Cream of Mushroom Soup

  • 2 tablespoons of olive oil
  • 2 medium leeks
  • 2 celery stalks
  • 16 ounces cremini mushrooms
  • 2 tablespoons of tamari
  • 1/4 cup of dry white wine
  • 2 large garlic cloves
  • 2 tablespoons of fresh thyme
  • 4 cups of vegetable broth
  • 1 pound of cauliflower

Then, you will add the broth and the cauliflower. Finally, you will want to let it simmer uncovered for about twenty minutes until the cauliflower is soft. Transfer everything to a blender, add the mustard and vinegar, and blend until smooth. Season it with anything you prefer and enjoy!

8. Pumpkin, Mushroom, and Spinach Pasta

Make this comforting recipe this Fall season, and enjoy making it for many Fall seasons to come! The ingredients for this Fall recipe include:

  • 8 ounces of pasta
  • 1 tablespoon of olive oil
  • 1/2 chopped small onion
  • 14 ounces of white mushroom
  • 2 cloves minced garlic
  • 1 teaspoon of Dijon mustard
  • 3 dashes Italian seasoning
  • 1 cup of pumpkin puree
  • 1/2 of heavy whipping cream
  • Handful of fresh spinach
  • salt
  • pepper
  • Optional: parmesan cheese for topping

First, you will boil a pot of salted water for the pasta. Cook it for as long as it needs. (The package or box will usually say how long the pasta needs to cook.) Add oil to a skillet and cook it on medium heat, then you will start to saute your onions, they will start to get a little brown and this should take roughly ten minutes. Then you will want to start chopping your mushrooms and add them to that pan along with the garlic, mustard, and Italian seasoning. This will also take roughly ten minutes. Finally, you will want to add the pumpkin, cream, and spinach. You will want to cook until you see that the spinach has started to wilt. Add the sauce to the pasta and you’re done!

9. Creamy Pumpkin Marinara

If you’re in the mood for pasta, but looking for a more Fall themed Pasta dish, then you will love the creamy pumpkin marinara. The ingredients include:

  • 2 tablespoons of olive oil
  • 1 yellow chopped onion
  • 1 chopped red bell pepper
  • 1/2 teaspoon of salt
  • 2 cloves of garlic
  • 1/2 teaspoon of dried oregano
  • 1/4 teaspoon of ground cinnamon
  • 1 can of diced tomatoes
  • 1 tablespoon of butter
  • 1 teaspoon of vinegar
  • pepper

First, as always, you will warm up the olive oil in a large pan. Next, you will add the onion, the bell pepper, and salt. Stir this until the onions and the pepper start to look tender. Then, you will add the garlic, oregano, tarragon, and cinnamon. Stir all of this for about one minute. Add the tomatoes and cook for another minute. Add the pumpkin puree and stir this until everything is combined. Stir this for about a good five minutes and then you will want to move it off of the heat. Take your mixture to the blender and then you will add the butter and vinegar. Blend the mixture until it looks smooth. Season it with your salt and pepper. Stir the mixture into your pasta and enjoy your creamy pumpkin marinara pasta!

10. Three-Ingredient Baked Caesar Chicken

Looking for a quick recipe with very few ingredients? Try out the amazing three-ingredient baked caesar chicken! The only ingredients that you will need for this recipe are:

  • four boneless, skinless chicken breasts
  • 1 cup of creamy caesar dressing
  • 2 ounces of parmesan cheese
  • 2 tablespoons of chopped parsley leaves

First, you will want to preheat your oven to at least 400 degrees. Next, you will want to pound the 4 boneless, skinless chicken breasts at one time. The easiest way to do this is by putting the chicken breast in a ziplock bag and use a meat mallet. Then you will pour 1 cup of creamy caesar dressing in a baking dish. Put the chicken in your baking dish and then flip them so that they are evenly coated with the dressing. Bake your dish until your chicken looks to be a golden brown. Add your parmesan over the chicken, evenly. Broil until the cheese looks to be melted and a light brown color. This should only take about three to four minutes, and your chicken will be ready to eat!
